Molecular Food Microbiology
Interdisciplinary research to improve our basic understanding of the mechanisms involved in persistence or growth of bacteria in food and food production environments. The work concentrates primarily in three areas: 1) studies on biofilm formation by foodborne microorganisms; 2) adaptation of foodborne pathogens to growth at refrigerated temperatures; 3) molecular techniques for detection and ecological studies of bacteria.
